In the central cities of the Brazilian Amazon, mainly Manaus and Belém, local restaurants observe a century-old custom of serving a festive brunch every Sunday. The special menu includes dishes representing the diverse communities that make up Amazonian society. Alongside local dishes and others that arrived from Japan or England, two surprising additions appear: couscous and dafina, a traditional Jewish-Moroccan stew for Shabbat. They only offer a hint of the remarkable story of the Jewish community of the Brazilian Amazon.
